Mushrooms-part I


Mushrooms, what a treat!
 They are full of proteins, good for your immune system and of course for your health. Some people call them super food because they have: fibers’, vitamins and minerals, all you need to be in shape.
So, they are healthy, easy to make and of course delicious, perfect for this blog :-)
Mushrooms in the oven with cheese
You need to clean the mushrooms (take their skin and brake the little “leg”- damn sounds so horrible) and then put them in a tray.
Chop the “legs” and chop some onion, put them in a pan with some olive oil and let them cook for 4-5 minutes (it’s like a mushrooms sauté) and add spices.
After that fill the mushrooms with the mushrooms sauté, add some salt (salt make them lose their water so they cook better) and put them in the oven.
Let them cook for 10-12 minutes and then add the grated cheese, and put them in the oven for another 3-4 minutes.
After the cheese melt take them out and enjoy them :-)!

Pickles- from a friend:)

" What's special about this recipe (for me of course) and maybe different from other recipes is the fact there's no water involved in the process (except when washing the peppers :) ).
So I only use vinegar, salt and lots of sugar, that is because i am a sucker for sweet-sour taste, intense of course!
For 5 Kilos of peppers:
- 1 litter of vinegar (it's a must to be wine vinegar!), 
- around half a kilo of salt (in theory better without iodine, but i never bother too much about this)
- around 1 kg of sugar - maybe a little less (i always taste it...i know i'm a nut, but it's very important for me to be sweet enough).
- few leaves of laurel and  grain pepper .
You put all these together and bring them to boiling point (use a big pot, because you will need to "soak" the peppers in gradually). During that, you wash the peppers and take out the seeds - i always cut them in half, but you can cut them in smaller sizes if you wish to make the stowing in the jar more easy.
When the brine is boiling you take the peppers and put them inside (small quantities, so they are covered by the liquid) and let them in 20 seconds or so until they become a little soft (not too much, otherwise in time, with the process of preserving, they will become too soft). Do that until you finished all the peppers.
Putting them in jars comes next. When you do that try to put them as tight as possible, so that very little room is left for the brine. Make sure the jars are clean and completely dry.
You can ad carrots (slices) or cauliflower directly in the jar (they don't need soaking in the boiling brine as the peppers do). And 1-2 leaves of laurel inside each jar and aspirin for preserving (never use preservative).
After you finished stacking them, pour the boiling brine over and make sure you cover the peppers. Then put the caps and tighten them as hard as you can.
The last part is "sterilizing" them in the hot oven - you heat the oven and put the jars in for 2-3 minutes. Then take them out and cover them all with a cloth to keep them warm like that for a while."

with or without meat?

Stew with or without meat

So, today I cooked stew...two kinds...with meat (chicken) for him and without meat for me.

First stew with meat:
You need vegetables: 1 small onion, 1 carrot, 1 or 2 peppers, 2-3 potatoes. Put a table spoon of olive oil in a pan, add the vegetables (without the potatoes) let them cook for 2 minutes and then add some water with tomatoes sauce and then potatoes. Let them boil and after 10 minutes add the chicken.
Let them boil together for 10 minutes, add the greenery and Enjoy!
Do not forget: boil the chicken first, I already told you why in a different post:  while chicken is boiled it lose fat and becomes healthier.







Stew with peas:
You need the same vegetables as for any other stew; this is the base for a cooked meal.
So: 1 small onion, 1 carrot, 1 or 2 peppers, 2 potatoes and a can of peas. Put a table spoon of olive oil in a pan; add the vegetable, after 2-3 minutes add water with tomato sauce and spices. Let them boil 15 minutes and they add the peas (the pea is from a can so it’s already boiling so you have to put it almost at the end). Add greenery and that’s it! I like to eat this stew with cabbage salad( cut the cabbage, add salt, olive oil and pepper, mix them together, enjoyyyyy).

Fish - the best

Hello, 
We all know that fish is very healthy and full of vitamins, proteins and others important nutrients for your body. But this is not a lesson this is a recipes so it have to be delicious and this one is the best :-).
Salmon with vegetables
You need a pieces of salmon, preferably fresh but if is frozen it does not matter; you wait until it will be defrost. Wash it and cut it is necessary.
Vegetables: Potatoes (I used 4 little ones), 2 carrots, 2 peppers, one onion. Clean them and put them in a ball with water and let them stay there for 10 minutes (until the water gain some color).
Put the vegetables with the water in a pan, add salt put the fish on top and add spices on.
Put them in the oven and let them cook for 30-40 minutes. If the potatoes are ready that means that everything else it is.
Enjoy this healthy and easy to made meal.

P.s. tomorrow is an important day, this blog makes a week older and I think I’m going to celebrate :-) , so stay tuned.

Light dinner

Hey, 

You know that it is good for you to have a light dinner (does not make you fat and that's healthy for you).
 So, you have to eat Proteins (cheese, meat, eggs- but this are no recomandated in the evening) and vegetables – all you can eat.
But it's also good to make it fast ;-) so that you have time for others things that you like (Facebook for example :-)).
So, for today we have a healthy, light and easy to make dinner: Vegetables Salad ;-)
  • 1 or 2 tomatoes, 2-3 cucumbers, 2 fresh onions
  • 8-10 olive
  • cottage cheese ( 3-5 % fat)
  • Mix them together and...
